Chef Bharat Sunar's creation: Superfood Millet & Chargrill Prawn Salad with Macro Greens.

Ingredients:

- Medium Sized Prawns: 2 Nos.

- Red and White Quinoa: 25 gms

- Organic Macro Greens: 3 grams 

- Rock Salt: Pinch (as per taste)

- Red Wine Vinegar: 1 tbsp

- Olive Oil: 1 tbsp

- Mix of Roasted Superfood Seeds (Sunflower, Pumpkin, and Flax Seeds): 1/2 tbsp

- Fresh Orange Juice: 2 tbsp

- Black Pepper: 1/2 tbsp

- Chopped Parsley: 2 tbsp

 

Method:

1. Boil the red and white quinoa in hot water for about 5 minutes; strain immediately with ice water to keep it fresh. Set aside. 

2. Wash the fresh prawns well and marinate with a pinch of chopped garlic, olive oil, rock salt, red wine vinegar, and a pinch of parsley. Mix well and set aside for 10 minutes. Grill the prawns in a hot pan or griller until cooked; set aside.

3. For the salad dressing, take a mixing bowl and combine red wine vinegar, orange juice, rock salt, pepper, olive oil, and chopped parsley. Stir well; the salad dressing is ready to use.

4. In a mixing bowl, combine the quinoa and roasted seeds. Add the prepared dressing and mix well with spoons.

5. Plate or place the salad in a nice big bowl. Garnish with fresh Organic Macro Greens and top with grilled prawns.
